Vegetable Pasta

Finding it tough to manage your kids vegetable intake? here is a unique way of keeping a tab on their diet by feeding them right proportion of green veggies.
this one is easy to digest and full of nutrients
... so relish..

INGREDIENTS(pasta)
  • Macaroni 180gms(1pkt)
  • 2 tsp oil for boiling pasta
  • salt to taste
INGREDIENTS(sauce)
  • 1 medium size capsicum
  • 5 to 6 medium size mushrooms
  • 5 to 6 french beans
  • 1 medium size carrot
  • 1/2 floret broccoli
  • 1/2 small size green cabbage
  • 100 gms shelled green peas
  • 2 medium size onions
  • 5 to 6 medium size ripe tomatoes
  • few coriander leaves
  • few mint leaves
  • salt to taste
  • 3 tsp oil
  • 1 tbsp tomato ketchup
  • 1 tsp oregano
  • 1/2 tsp black pepper powder
  • 1 tsp red chilly powder
MEHOD:
  • Boil the macaroni with salt and oil for 7-8 minutes
  • Drain and run cold water through. Keep it aside
  • Boil peas
  • Slice the vegetables
  • Grate the tomatoes
  • Saute onions in oil till they are light pink
  • add the grated tomatoes spices and the vegetables
  • saute these vegetables till oil leaves the pan
  • add the tomato ketchup and the boiled macaroni with peas
  • garnish with coriander and mint leaves
  • serve it hot
